Rich, Gourmet 'Taikotsu' Ramen at 'Taisho' in Ginza


'Taisho' is a ramen shop serving gourmet bowls of specialty sea bream broth "Taikotsu" ramen that recently opened in Ginza. For ramen lovers seeking a refined and unique bowl of noodles, this place is definitely worth a visit!

Thick, flavor-packed 'taikotsu' soup

'Taikotsu Ramen' ¥1,400 (mini: ¥900)
If you like ramen, you're probably familiar with 'tonkotsu' (豚骨) ramen, right? Well, at 'Taisho,' a newly opened ramen restaurant inside of re:Dine Ginza, they specialize in a unique type of ramen called 'taikotsu' (鯛骨) ramen. Whereas tonkotsu soup is made by cooking pork bones, taikotsu soup is made by cooking tai (sea bream) bones to make a thick and cloudy soup that is rich with umami and flavor.

Each bowl of soup is made with the bones of an entire sea bream, and it shows! The soup is made with zero added oils or artificial flavors, yet has incredible umami that can hold its own against tonkotsu ramen.
'Taikotsu White Sesame Tantanmen' ¥1,400 (mini: ¥900)
In addition to the standard taikotsu ramen, Taisho also makes a wonderful tantanmen that uses the taikotsu soup as a base but adds spice, ground meat, and white sesame for a flavorful and aromatic bowl of ramen that pleases the senses.

It's hard to stop eating the thick, rich, and flavorful soup, and you'll probably want to finish it off with a helping of white rice or a second helping of noodles. It's a very grown-up and complex bowl of ramen that leaves an impression.
